The Tenderometer is manufactured mainly of stainless steel.
For improved protection, the electronic system is housed in a box easily removed for repair.  
The product sample is placed into the Tenderometer cell, over the fixed knives and the motorized rotary knives crush and cut it.
While cutting the product, the blades measure its hardness, then the rotary knives move back and the cut product is removed.
The force required to squash the peas is measured electronically and displayed as  Tenderometer units.
A microprocessor torque checking system gauges the quasi-stationary knives reaction, displays the latest results (up to 20) as a digital read–out and prints them.
