Cream is a dairy product obtained by skimming the fat layer in milk in large industrial centrifuges called "separators".

Cream contains carotenoid pigments that give it its typical yellowish color. Depending on the fat content cream is called half and half (10-18%), coffee cream (18-30%), whipping cream (25%) and heavy cream (36-40%).
