How does this work?

The purpose of the JBT Forced Circulation  Hot Break is to inactivate the enzymatic process
This enzymatic reaction “destroys” the pectin chain making it impossible to reach the required level of viscosity.
The system has been specifically designed to instantaneously increase the temperature of big quantities of incoming product from ambient to inactivation temperature. The working temperature ranges between 90 and 98°C.
It consist of:
• One stainless steel cylindrical atmospheric chamber to collect and hold the product at high temperature
• Centrifugal pump for recirculation
• Stainless steel tubenest heat exchanger to heat and maintain the required product temperature
• Monopump for product extraction
• Steam feeding manifold, automatic temperature control system and product level control within the hot chamber.
