奶油

奶油是通过提取鲜奶中的脂肪层而得到的乳制品,提取工艺所采用的大型工业离心机称为“分离器”。

奶油包含类胡萝卜素色素,使其呈现典型的微黄色。根据脂肪含量不同,奶油又分为半奶油( 10-18 %)、咖啡奶油( 18-30 %)、鲜奶油( 25 %)和重奶油( 36-40 %)。
