工作原理

灭菌过程是一生中热工过程,用于杀灭细菌和生产货架存销类食品。

灭菌:

这一工艺流程通常利用超压控制技术实现。之所以使用超压,是由于容器内部压力会在如下情况下出现增高:

  • 扩大食品生产规模
  • 蒸汽压力上升
  • 顶空空气加热状态

超压空气所需的补偿量取决于以下参数:

  • 容器种类
  • 容器的强度
  • 灌装条件

我们可以区分四种类型的容器。金属罐通常具有坚韧的壁面。不过,其厚度不一。罐头的强度根据两片结构和三片式结构和尺寸大小不同而有所差异。玻璃瓶需要杀菌的目的不仅要使细菌灭活,而且还要在瓶盖内形成一种化合物密封状态。对于这些容器中,顶空和初始真空状态都是至关重要的。包装小袋强度通常不大,但也采取热敏感性密封工艺。塑料容器通常有一个很大的顶空区域。内部压力与压力类型的准确匹配是至关重要的。
